Simple Chicken and Sweet Pepper Soup

Ingredients

  • 1 shallot, diced

  • Canola oil, as needed for searing

  • Kosher salt, to taste

  • Black pepper, to taste

  • 2 pounds Smart Chicken drumsticks

  • 1 sweet onion, diced

  • 1 serrano chili, seeds and pith removed and finely diced

  • 1 tablespoon dark chili powder

  • 1 ripe tomato, diced

  • 2 bell peppers (red, yellow, or green), diced

  • 64 ounces chicken stock

  • ½ cup sliced green onions

  • Fresh cilantro, for serving (optional)

  • Sour cream, for serving (optional)

Directions

Season the drumsticks generously with salt and pepper. Heat a soup pot over medium-high heat and sear the drumsticks until golden brown on all sides. Remove the chicken from the pot, and add the onion, chili, bell peppers and chili powder. Sauté for about 5 to 10 minutes, until vegetables are soft. Add the tomatoes, chicken, and cooking stock. Bring to a boil, reduce to a simmer, and cook for 45 minutes to 1 hour. Add in green onions. Serve with whole drumsticks, or remove the drumsticks from the soup, pull the meat off the bones, and add back to the soup. Serve with fresh cilantro and sour cream, if desired.
