Air Fryer Chicken and Broccoli

This air fryer chicken and broccoli is easy to make, and jam packed with flavor. Plus, the entire dish is ready in under 30 minutes. The chicken is juicy on the inside and crispy on the outside. Paired with the crispy broccoli, onions and delicious brown sauce, and you’re in for one tasty meal.

Serve this dish alongside cooked rice for a heartier meal or keep it lower carb by enjoying it as is. You would also serve it over a bed of warm rice noodles for a fun and tasty twist.

Ingredients

Chicken and Broccoli

  • 1 lb. Smart Chicken Boneless Skinless Chicken Breasts, cubed

  • 6-8 ounces broccoli florets

  • 1 sweet onion, peeled and sliced

  • Cracked black pepper, to taste

Marinade

  • 2 tablespoons avocado oil, or vegetable oil

  • 2 teaspoons garlic, minced

  • 2 teaspoons ginger, minced

  • 1 tablespoon sesame oil

  • 1 tablespoon rice vinegar

  • 2 tablespoons light brown sugar

  • ¼ cup low sodium soy sauce

  • ¼ cup water

Add the following to the remaining marinade:

  • 1 teaspoons cornstarch

  • ¼ cup water

Directions

In a mixing bowl, combine avocado oil, minced garlic, minced ginger, sesame oil, rice vinegar, light brown sugar, low sodium soy sauce, water. Mix well.

Cube the chicken breasts into bite-sized pieces and add it to a mixing bowl. Add the sliced onion and broccoli florets to the bowl with the chicken.

Pour about HALF of the marinade over the chicken broccoli and onion. Toss until well coated and season with cracked black pepper. Add to the air fryer basket and fry for 18 minutes at 375 degrees. Be sure to toss halfway through cooking.

While the chicken is air frying, take the remaining marinade and add 1 teaspoon cornstarch and ¼ cup more water. Mix well. Pour this mixture into a small saucepan and simmer over low heat until the garlic and ginger have softened, and the sauce has thickened. If it gets too tight add a touch more water.

Pour the sauce over the cooked chicken and broccoli and enjoy hot!
