Apple Slaw with Shredded Chicken

Serves 8-10

Tossed with a citrus vinaigrette, this slaw mixture made with napa cabbage, apples, and poached Smart Chicken tenders is great for small gatherings or weekday lunches.

Ingredients

  • 1 pound Smart Chicken Tenders

  • 1 large head Napa cabbage

  • 3 granny smith apples

  • 6 TB olive oil

  • 2 TB apple cider vinegar

  • Juice of 1 lime

  • 1 TB sugar

  • ½ tsp kosher salt

  • ¼ tsp pepper

  • 4 oz. crumbled Gorgonzola cheese

Directions

Using the pressure cook function on your pressure cooker, combine raw chicken and fill the cooking chamber with water until chicken is covered. Secure lid and pressure cook for 8-10 minutes or until chicken has reached an internal temperature of 165 F. Once fully cooked, allow chicken to cool and then shred into bite size pieces. Set aside. Using a food processor, shred cabbage and apples into slaw and set aside. Make a vinaigrette by combining olive oil, vinegar, lime juice, sugar, salt and pepper. Whisk until ingredients have been mixed well and immediately toss with cabbage and apple mixture.
