Makes 3 3/4 cups
Ingredients
1 1/4 cup short grain brown rice
1 tablespoon unsalted butter, optional
1 medium shallot, minced
Salt & pepper to taste
Directions
Heat oven to 350F. Place rice, butter, and shallot in 1 1/2 quart baking dish. In a small sauce pan heat Bone Broth to a gentle boil. Pour broth over rice mixture, cover, and bake until all liquid is absorbed (about 50 minutes). Remove from oven and let stand 5-10 minutes. Fluff with fork, add salt and pepper to taste, and serve.
Variations
After baking add 1-2 tablespoon of finely chopped fresh herbs of your choice (parsley, sage, or thyme work well.)
Recipe can be doubled. Baking time will increase slightly.
