Blackened Chicken Sandwich with Cheese Sauce

Ingredients

  • 1 pound Smart Chicken Boneless Skinless Chicken Breasts, 2 breasts cut in half

  • 2 Tablespoons paprika

  • 1 Tablespoon cayenne pepper

  • 1 Tablespoon onion powder

  • 1 teaspoon garlic powder

  • 1 teaspoon black pepper

  • 1 teaspoon salt

  • 1/2 teaspoon basil

  • 1/2 teaspoon oregano

  • 1/2 teaspoon thyme

  • 2 Tablespoons butter

  • 4 Hawaiian style rolls

  • Garnish with lettuce leaves, tomato Slices, red onion slices if desired

Cheese Sauce:

  • 1 can evaporated milk

  • 1 cup Monterey jack cheese

  • 1 cup cheddar cheese

  • 1 teaspoon salt

  • 1 teaspoon paprika

Directions

Cut chicken in half to make 4 bun-sized pieces, pound flat with mallet. Mix seasonings into a bowl and heavily season all sides of the chicken. Heat non-stick skillet or grill skillet on medium-high heat with 2 Tablespoons butter. For sauce, heat evaporated milk in a small sauce pan until it is simmering.

Add cheeses and seasonings, whisk until thickened about 3-5 minutes. Leave on warm until you are ready to serve. Add chicken to pre-heated pan. Searing on the top side first about 3-5 minutes, flip and repeat, or until chicken is 165°F. Serve chicken on bun with toppings and cheese.
