In this recipe, tender chicken breasts are stuffed with pesto, mozzarella and cherry tomatoes. Pair this with a fresh salad or pasta for the perfect springtime dinner.

Ingredients
4 Smart Chicken Boneless Skinless Chicken Breasts
1/2 cup mozzarella
1/4 cup pesto
16-20 cherry tomatoes, quartered
2 Tablespoon balsamic vinegar
2 teaspoon salt
1 teaspoon pepper
1 teaspoon garlic powder
1 teaspoon onion powder
Directions
Preheat oven to 400°F. Butterfly Chicken breasts so that they open like a book lengthwise in half. Pound breasts down to a thin layer evenly with a mallet or the back of a saucepan. Set aside. Combine mozzarella, pesto, tomatoes, and balsamic in a bowl. Once combined, divide the filling you just made over the insides of the chicken breasts. started on the end of the chicken that was the bottom of the breast, roll inward creating a pinwheel with the chicken. Secure with toothpick and place on a sheet tray lined with parchment paper. Once you have assembled all of the chicken breasts, season the top with salt, pepper, garlic and onion powder. Bake for 25-30 minutes or until an internal temp of 165°F is reached.
