Caramelized Onion Blackened Chicken

This caramelized onion blackened chicken recipe is perfect any night of the week. Made from simple ingredients, you can pull this entire meal together in under 30 minutes. The chicken is pan roasted with a simple blackening spice, then topped with caramelized onion and provolone or mozzarella cheese.

Enjoy this dish with a side of vegetables and rice for a heartier meal. For a lighter option, try cauliflower rice instead of regular.

Ingredients

  • 1 lb. Smart Chicken Boneless Skinless Breasts, butterflied

  • 1 tablespoon olive oil

  • 1 tablespoon butter

  • 1 teaspoon dried oregano

  • ½ teaspoon garlic powder

  • ½ teaspoon onion powder

  • ½ teaspoon paprika

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • ¼ teaspoon cayenne pepper

  • 2-3 medium onions, peeled and sliced

  • 1 tablespoon olive oil

  • ¼ teaspoon black pepper

  • 4 slices provolone cheese

  • 1 tablespoon Italian parsley

Directions

Add olive oil to a non-stick skillet over medium heat. Add the sliced onions and sauté until they brown. Season with a few turns of cracked black pepper. Remove from the heat and set aside. Cut your chicken breasts into four thin cutlets. Toss them with the blackening spice. Make sure they’re well coated.

Heat a non-stick skillet, add butter and olive oil. Once hot, add the seasoned chicken. Cook for 5-6 minutes per side or until cooked through. Top the chicken with the caramelized onions and provolone cheese. Add a touch of water to the pan. The steam will help melt the cheese. Top with freshly chopped Italian parsley.
