Chicken Pot Pie Casserole

Make this classic comfort dish with less hassle but with the same great flavor! This dish is sure to be a winter staple.

Ingredients

  • 1 lb. Smart Chicken Boneless Skinless Chicken Thighs, cubed

  • 1 carton Chicken Bone Broth

  • 1 cup carrots, medium dice

  • 1 cup celery, medium sliced into half moons

  • 1 ½ cups onion, medium dice

  • 1 ½ cups potato, medium dice

  • 1 tablespoon salt

  • 1 teaspoon black pepper

  • 1 tablespoon Italian seasoning

  • 4 tablespoons butter

  • ¼ cup flour

  • ¼ cup cream

  • 1 pkg puff pastry, cut into 1” stripes

  • 1 egg, for egg wash

Directions

Preheat the oven to 400°F. Heat large skillet over medium-high heat. Melt half of the butter in the pan. Add cubed Smart Chicken boneless skinless chicken thighs, salt and pepper, cook through until no longer pink. Remove chicken from pan and set aside. Add remaining butter, celery, carrot, onion, and potatoes. Sauté until tender. Add Italian seasoning and flour and cook until flour is blonde in color. Add the chicken bone broth stirring to combine, add cooked chicken.

Allow to cook for 5-10 minutes, until the sauce thickens. Remove from heat and stir in cream. Pour contents into a sprayed 9” x 13” casserole dish. Layer the stripes of puff pastry weaving as you go, on top of the chicken and vegetable mixture. Brush with egg wash, and sprinkle with additional salt on top of the crust. Bake at 400°F for 25 minutes. Enjoy!
