Ingredients
1 pound Smart Chicken tenders
1 teaspoon chili powder
½ teaspoon onion powder
¼ teaspoon cayenne pepper
1 teaspoon ground cumin
¼ cup water
1 tablespoon oil
2 to 4 cups shredded lettuce
½ cup cherry tomatoes, halved
¼ cup sweet corn
¼ cup cabbage, shredded
1 avocado, diced
¼ cup black beans
2 tablespoons diced red onion
1 mini bell pepper or ½ a regular bell pepper, sliced
1 lime, sliced into wedges
1 tablespoon fresh cilantro
Directions
In a seal-able plastic bag or container, combine the chili powder, onion powder, cayenne, cumin, water, and oil. Add the chicken, turn to coat, and seal. Refrigerate for two hours or overnight. To cook, preheat an oiled grill grate. Grill seasoned chicken until internal temperature reads 165°F on an instant-read thermometer.
Meanwhile, assemble burrito bowls. Slice chicken and serve over top with lime wedges on the side.
