Chicken Satay with Spicy Peanut Sauce

This chicken satay with spicy peanut sauce is the perfect weeknight meal. It’s easy to make, loaded with flavor and jam packed with protein.

Ingredients

For the Chicken Satay:

  • 1 pound Smart Chicken Boneless Skinless Thighs

  • 1 teaspoon salt

  • 1 teaspoon turmeric

  • 1 teaspoon ginger powder

  • 2 teaspoons yellow curry powder

  • 1 tablespoon garlic, minced

  • 2 tablespoons soy sauce, low sodium

  • 2 tablespoons light brown sugar

  • ¼ cup coconut milk

  • 2 teaspoons sesame seeds, as garnish

  • 1 tablespoon green onions, chopped small as garnish

For the Spicy Peanut Sauce:

  • ¼ cup peanut butter

  • 1.5 tablespoons lime juice, fresh squeezed

  • 1.5 tablespoons soy sauce, low sodium

  • 2 teaspoons sriracha

  • 1 tablespoon light brown sugar

  • 2-3 tablespoons warm water, to thin it out

Directions

Combine peanut butter, lime juice, soy sauce, sriracha, light brown sugar and water in a small mixing bowl. Set aside. Cut the chicken tights into one-inch-thick pieces. Add the pieces to a non-reactive, glass bowl. Combine with coconut milk, light brown sugar, minced garlic, salt, turmeric, yellow curry powder, ginger powder, soy sauce. Mix well and let rest for 20 minutes at room temp or 2 hours covered in the refrigerator.

Skewer the meat. Use about one thigh per skewer. I was able to get 4 skewers.

Clean the grill grates with a wire brush. Making sure to remove any build up. Preheat the grill to 475-500°F. Use tongs to pinch a paper towel that’s been dipped in a neutral oil like avocado, canola or vegetable oil. Use the paper towel to brush / coat the grates in oil. This will prevent the chicken from sticking.

Add the skewered chicken. Grill for 4-5 minutes per side. Total cook time is 12-15 minutes or until the internal temperature reaches 165°F. Remove from the grill and rest for 5-10 minutes. Once grilled, top with sesame seeds, chopped green onions, and peanut sauce.
