Chicken Souvlaki Lettuce Wraps

These marinated chicken skewers are so flavorful and the perfect recipe to pair with tangy pickled onions, lemony tzatziki and fresh veggies.

Ingredients:

Chicken Souvlaki

  • 2 pounds Smart Chicken Organic Boneless Skinless Breasts

  • 1 Lemon, zested and juiced

  • 1/4 cup Olive Oil

  • 2 tsp Garlic, grated

  • 1 tsp Paprika

  • 2 tsp Dried Oregano

  • Black Pepper

  • Kosher Salt

  • Chopped Parsley, for garnish

  • Wooden Skewers, soaked in water for 20-30 minutes

Tzatziki

  • 1 cup Greek Yogurt

  • 1 Lemon, zested and juiced

  • 1 Garlic Clove, grated

  • 2-3 TB Chopped Dill

  • 1/2 Cucumber, grated and water squeezed out

  • Olive Oil

  • Kosher Salt

Pickled Red Onions

  • 3/4 cup White Vinegar or Apple Cider Vinegar

  • 1/4 cup Water

  • 1 TB Granulated Sugar

  • 1 tsp Kosher Salt

  • 1 Red Onion, thinly sliced

  • Cucumber Tomato Salad

  • 1 cup Cucumber, diced

  • 1 cup Tomatoes, diced

  • 1-2 TB Chopped Parsley

  • Olive Oil

  • Black Pepper

  • Kosher Salt

Remaining Fixings

  • Diced Feta

  • Kalamata Olives

  • Lettuce Wrap Leaves

  • Lemon Wedges

Directions

Chicken Souvlaki: Cut chicken into medium sized cubes. Add chicken to a large container or mixing bowl along with lemon zest and juice, olive oil, garlic, paprika, oregano and a few cracks of black pepper. Marinate in the fridge for 2 hours. Skewer the chicken and season with kosher salt. Heat a grill pan or outdoor grill to high heat. If using an indoor grill pan, brush it with some oil. Grill the chicken skewers for about 2-3 minutes per side, until all the sides are grilled and the chicken is cooked through (reaches an internal temperature of 165F). Let the chicken rest and finish with some chopped parsley.

Tzatziki: Combine ingredients together with a drizzle of olive oil and season with kosher salt to taste.

Pickled Red Onions: Place onion is a heat proof bowl. Add vinegar, water, sugar and salt to a small pot and bring to a boil. Pour the vinegar over the onions and set aside to pickle. Let the onions cool to room temperature before storing in the fridge.

Cucumber Tomato Salad: Combine ingredients together with a drizzle of olive oil and season with kosher salt to taste.

Assembly: Once the chicken skewers are cooked and rested and the remaining ingredients are prepared, plate everything on a large platter with all the fixings for people to make their own lettuce wraps.
