Chicken Taco Stuffed Peppers

This recipe combines fresh Smart Chicken Boneless Skinless Chicken Breasts (or tenders), bell peppers, traditional taco flavors and Pico de Gallo. This twist on two classics, makes for a great dinner time treat for the whole family!

Ingredients

  • 2 lbs Smart Chicken Boneless Skinless Chicken Breasts (or tenders)

  • 1 package taco seasoning

  • 4 medium bell peppers

  • 1 ½  cups cheddar cheese, shredded

  • 2 cups shredded lettuce

Quick Pico de Gallo:

  • 1 large tomato, small dice

  • 1/2 jalapeno, minced

  • 1/2 small yellow onion

  • 1 teaspoon salt

  • 2 Tablespoons fresh cilantro

Directions

Place chicken breasts, taco seasoning and 1 cup of water into slow cooker. Cook on high for 1.5 hours until tender. Once chicken has reached 165°F, remove from slow cooker and shred. Wash and cut peppers in half and remove seeds. Make Pico de Gallo, and store in refrigerator. Fill peppers with shredded chicken, then top evenly with shredded cheese over all pepper halves. Bake at 350°F, for 20 minutes. Top with lettuce, Pico de Gallo and serve.
