Ingredients
1 tablespoon canola or vegetable oil
2 cups onion, chopped
1 cup celery, chopped
1 cup carrots, coined
1 cup red bell pepper, chopped
3 cloves garlic, minced
2 16.9 oz Boxes or 4 cups Smart Chicken Classic Chicken Bone Broth
1 cup water
1/2 teaspoon ground thyme
¼ teaspoon pepper
1 teaspoon salt
2 zucchini squash, spiralized
Directions
Using the saute function on your pressure cooker, add 1 tablespoon oil. Add onions, celery, carrots, bell pepper and garlic and cook until onions are translucent but not browned. Add bone broth and chicken breast. Secure lid and pressure cook for 10 minutes. Do a quick release of the pressure and remove the chicken, shred and set aside. Add 1 cup water, thyme, pepper and salt to broth. Add shredded chicken back to cooking chamber. Add zucchini and season as needed. Serve when zucchini has softened.
