This fresh chicken salad combines Smart Chicken tenders, Greek yogurt, toasted almonds and dried cranberries. Enjoy in a wrap, sandwich, on a salad, or in lettuce wraps.
(Serves 4)
Ingredients
1 lb. Smart Chicken Tenders
1/2 cup Greek Yogurt
1/4 cup yellow onion, small dice
1/2 cup dried cranberries
2 Tablespoon sliced almonds, toast if desired
2 teaspoon Kosher salt
1 teaspoon black pepper
2 teaspoon curry powder blend
Directions
Season chicken with 1 teaspoon salt and 1 teaspoon pepper. Roast chicken 350°F for 20 minutes or until chicken has reached an internal temperature of 165°F. While chicken is cooking, toast almonds in a dry pan on medium heat until they are lightly browned and fragrant. Combine all other ingredients and place in the refrigerator. Once chicken is cooked, allow to cool in the refrigerator for about 20 minutes. Dice into bite sized pieces. (Cut down the center of the tender and then across the strips into 1/2-inch pieces. Combine the chicken into the yogurt mixture. Best if allowed to sit combine overnight but can be eaten right away.
