These firecracker chicken bites are crispy on the outside and juicy in the center. Smothered in the most delicious sauce, you’re going to love this recipe. Enjoy these bites as an appetizer or over a salad. You can tuck them inside of a wrap too! No matter what, they’re delicious.
Ingredients
Chicken bites:
1 lb. Smart Chicken Boneless Skinless Breasts, cubed
2 eggs, whisked
1/4 cup cornstarch
1/2 teaspoon salt
1/2 teaspoon black pepper
3/4 cup panko breadcrumbs
Sauce:
1/2 cup buffalo sauce, Frank's Red Hot
1/2 cup brown sugar
2 tablespoons butter
1 tablespoon rice vinegar
Directions
Preheat the oven to 375 degrees. Line a baking tray with parchment paper. Cube your chicken breasts into bite sized pieces. Setup three plates, one with cornstarch, salt and pepper. The second, with two whisked eggs. The third, with panko breadcrumbs. Dredge the chicken through the cornstarch mixture, then the eggs, then the panko. Place the breaded pieces on the prepared baking tray. Repeat until all the chicken is breaded. Spray the chicken with olive oil cooking spray and bake for 25-30 minutes or until the center reaches 165 degrees Fahrenheit. Flip halfway through.
While the chicken bakes, make the sauce. Combine buffalo sauce, light brown sugar, rice vinegar, and butter over low heat. Whisk until well combined. Once the chicken is cooked, grab a large bowl. Add the chicken to the bowl and toss it with the sauce until well coated. Serve hot with freshly chopped green onions. Option to add red pepper flakes.
