Makes 4 sandwiches
Melty cheese and savory breakfast maple sausage tucked between slices of French toast make for a breakfast-inspired sandwich that’s delicious any time of day.
Ingredients
8 slices brioche bread
6 whole eggs
½ cup half and half
Kosher salt and freshly cracked black pepper, as needed
4 slices havarti cheese
4 slices sharp cheddar cheese
Canola oil and butter, as needed
Maple syrup, for serving
Powdered sugar, for serving (optional)
Directions
Preheat oven to 425°F. Slice the sausages in half, the long way; set aside.
In a wide, shallow dish, whisk the eggs and half and half; season mixture lightly with salt and pepper. Soak each piece of bread in the egg mixture and lay flat on a baking sheet or plastic wrap. Top each slice of bread with a slice of cheese. Top 4 (half) of the slices with the sliced sausage.
To a large cast iron skillet or a nonstick pan over medium-high heat, add ½ tablespoon of butter and ½ tablespoon of oil and bring to temperature. Carefully sear each slice of bread, cheese side up, until golden brown (you may need to sear in batches). Transfer each slice to a baking sheet; bake until the cheese is completely melted and the sausage is hot, about 6 to 8 minutes. Remove from the oven and allow the slices to cool slightly; top the slices with sausage with the slices with cheese. Garnish with maple syrup and powdered sugar and serve.
