Garden Veggie Chicken Salad Wrap

This simple chicken salad combines freshly poached Smart Chicken, garden greens, Greek yogurt, feta cheese and spices rolled up in a spinach flavored tortilla.

Serves 4

Ingredients

  • 4 (10” round) garden spinach herb tortillas

  • 1 pound Smart Chicken Boneless Skinless Chicken Breast

  • 3/4 cup plain Greek yogurt

  • 2 TB mayonnaise

  • 1/3 cup chopped celery

  • 1/3 cup peas

  • 2 TB lemon or lime juice

  • 1 tsp Italian seasoning

  • 1 TB chopped green onion

  • 4 oz feta cheese

  • Kosher salt & pepper to taste

Directions

Using the pressure cook function on your pressure cooker, combine raw chicken and fill the cooking chamber with water until chicken is covered. Secure lid and pressure cook for 8-10 minutes or until chicken has reached an internal temperature of 165°F. Once fully cooked, allow chicken to cool and then either shred or cube as desired. Combine chicken with Greek yogurt, mayonnaise, chopped celery, peas, lemon juice, Italian seasoning, green onion and feta cheese. Season to taste with salt and pepper. Place filling in the center of tortilla, roll, slice and serve.
