Garlic Parmesan Chicken Pasta

Ingredients

  • 1 (16oz) box penne pasta, cook as directed

  • 1 pound Smart Chicken boneless skinless chicken breast

  • ½ teaspoon kosher salt

  • ¼ teaspoon pepper

  • 1 tablespoon canola or vegetable oil

  • 1 tablespoon butter

  • 3 cloves garlic, minced

  • ½ cup red onion, chopped

  • 1 cup red bell pepper, chopped

  • 2 tablespoons sun-dried tomatoes, finely chopped

  • 1 tablespoon flour

  • ¾ cup Chicken Bone Broth

  • ½ cup heavy cream

  • ½ cup Shredded Parmesan cheese

  • Fresh basil, optional

Directions

Season chicken with salt and pepper. In a sauté pan over medium heat, combine vegetable oil and butter. Once oil is hot, add chicken and cook for 5-6 minutes on each side or the internal temperature reaches 165. Remove chicken from pan and set aside. Using the same pan, add garlic, onion, red pepper and sundried tomatoes and cook until onions are translucent. Stir in the flour and stir to coat the vegetables. Slowly stir in the bone broth and bring to a simmer. Lower heat and add cream. Add parmesan cheese and cooked pasta and stir to coat the pasta. Slice the chicken and mix in or serve on top of the pasta. Garnish with fresh basil if desired.
