Serves 2 to 4 as a main course
Ingredients
1½ pounds Smart Chicken boneless skinless breasts or tenders
3 to 5 tablespoons melted butter or olive oil
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon Cajun seasoning
1 teaspoon dried oregano
4 teaspoons sea salt
1 teaspoon white pepper
1 teaspoon ground paprika
2 cups almond meal
1 egg
½ cup unsweetened almond milk
Directions
Preheat oven to 400°F. Brush a small amount of olive oil or butter on an oven grill pan (you can also use a baking sheet lined with a grilling rack).
In a small bowl, combine all the seasonings except for the paprika and divide in half. Add the paprika to one half of the mixture. Toss the chicken in the mixture with the paprika. Set aside.
Add the almond meal to a bowl and mix in the remaining half of the seasoning. In a separate bowl, whisk together egg and almond milk.
One at a time, dip each piece of chicken in egg and milk mixture, dredge in the seasoned flour to coat, then transfer to a plate. Let the chicken rest for 10 minutes.
Coat each chicken piece in the seasoned flour mixture again (not the egg), and transfer to the grill pan. Drizzle chicken pieces with remaining butter or olive oil. Bake the chicken at 400°F for 40 minutes, or until chicken is golden brown and an instant-read thermometer inserted into the thickest portion reads 165°F. Serve immediately.
