Green Goddess Flatbread Pizza with Shredded Skillet Chicken

This easy to prepare flatbread pizza combines spicy arugula, green goddess dressing and shredded skillet chicken that could be used on salads, wraps or flatbread pizza.

Serves 4-6

Ingredients:

  • 1 container (14oz) pizza crust, ready to bake

  • 1 TB canola oil

  • 1 pound Smart Chicken Tenders

  • 4 oz crumbled goat cheese

  • 2 oz fresh arugula

Chicken Marinade:

  • ½ cup water

  • ¼ cup Worcestershire sauce

  • 1 tsp minced garlic

  • 2 TB olive or canola oil

Green Goddess Dressing:

  • 1 cup parsley

  • ½ cup basil leaves

  • 1 cup plain Greek yogurt

  • 2 teaspoons minced garlic

  • ¼ cup olive oil

  • Juice of 1 lime

  • 1 jalapeno pepper, seeded

  • 1 TB white balsamic vinegar

  • ½ tsp kosher salt

  • Pinch black pepper

Directions

Prebake pizza crust as directed on package.

To prepare dressing, combine parsley, basil, Greek yogurt, garlic, olive oil, lime juice, jalapeno, vinegar, and pepper in a food processor and blend until well combined. Set aside.

To prepare chicken marinade, combine water, Worcestershire sauce, oil, and garlic. Add chicken and let marinate for at least 1-2 hours before cooking. When ready to cook, warm 1 TB oil over medium heat in a skillet. When oil is hot, add chicken tenders and cook until chicken reaches an internal temperature of 165°F. Remove from heat and shred once chicken is cool enough to handle.

Once bread has prebaked, add a thin layer of green goddess dressing and sprinkle with goat cheese and shredded chicken. Place back in oven until crust is finished and the cheese has melted. Remove from oven and add fresh arugula and drizzle with additional dressing. Extra dressing can be used a dipping sauce.
