Grilled Chicken & Fresh Peach Kabobs With Herb Chutney

Makes 8 skewers

Ingredients

  • 6 boneless skinless Smart Chicken thighs, each cut into 4 pieces

  • 2 peaches, each pitted and cut into 8 pieces

  • 1 red onion, peeled and cut into 1-inch pieces

  • 3 teaspoons kosher salt

  • 3 teaspoons black pepper

  • 2 tablespoons olive oil

  • 8 skewers, metal, or wooden soaked in water for 20 minutes

Directions:

Preheat a grill or grill pan to medium-high heat. Separate the chicken, peaches, and onion into separate containers. Season each of the items with the salt, pepper, and olive oil and toss well to coat. Thread alternating pieces of chicken, peach, and red onion onto the skewers.

Transfer the skewers to a clean and oiled grill grate and cook for about five minutes on one side. Turn over and grill for another 4 minutes on the other side. Remove when the chicken reaches an internal temperature of 165°F.

Ingredients (for the Herb Chutney):

  • 1 cup fresh cilantro leaves

  • 1 cup fresh parsley leaves

  • ¼ cup fresh mint leaves, packed

  • 2 cloves garlic, peeled

  • 1 jalapeño, stem and seeds removed

  • ¼ cup extra virgin olive oil

  • 2 tablespoons lemon juice

  • 1 tablespoon white vinegar

  • 2 teaspoons sugar

  • 1 teaspoon salt

Directions:

In a blender or food processor, combine all ingredients and blend until the mixture is smooth. Refrigerate until ready to serve.
