Healthier Chicken Salad

Serves 6

Ingredients

  • 1 pound boneless, skinless Smart Chicken, cooked and shredded

  • 1 (7-ounce) container 2% plain Greek yogurt

  • 1 cup celery, chopped

  • ½ cup red onion, finely chopped

  • 1 large apple, cored and chopped

  • ¼ cup sliced almonds

  • ½ teaspoon salt

  • ¼ teaspoon pepper

  • Whole-grain bread, whole-grain crackers, or salad greens (for serving)

Directions

In a medium saucepan, cover chicken breast with water and bring to a boil. Reduce heat and let simmer for 20 minutes. Remove pan from heat and transfer chicken to a cutting board to let cool. Once chicken is cool, shred into bite size pieces or cut into cubes. Set aside.

In a medium bowl, combine all ingredients with cooled chicken and mix well. Serve over whole-grain bread or salad greens, or alongside whole-grain crackers.
