Ingredients
4 Smart Chicken leg quarters
Canola oil
Kosher salt, to taste
Freshly ground black pepper, to taste
1 sweet onion, sliced
½ cup to 1 cup honey, based on desired sweetness
½ cup cider vinegar
2 cups chicken stock
3 bay leaves
1 tablespoon chili flakes
Directions
Season the chicken liberally with salt and pepper and lightly coat with canola oil. In a stock pot or the preheated insert of a pressure cooker, sear the chicken until golden brown on all sides. Add the onions and sauté for about 5 minutes. Deglaze the pan with the honey, vinegar, and chicken stock. Add the bay leaves and chili flakes. If using a pressure cooker, cook on the poultry setting (high pressure for 15 minutes). If using a stock pot, cover and simmer until tender, about one and a half hours.
