Jerk Chicken Skewers

These jerk chicken skewers are the perfect blend of sweet, smoky and spicy! Using Smart Chicken Boneless Skinless Chicken Thighs, the natural flavors in the chicken combined with this spice blend will take dinner to the next level. 

Ingredients

  • 3 lbs Smart Chicken Boneless Skinless Chicken Thighs

  • 6 green onions, chopped

  • 2 shallots, peeled and chopped

  • 6 habanero peppers, stems and seeds removed

  • 1 tablespoon fresh garlic, minced

  • ½ teaspoon dried ginger

  • 1 tablespoon dried thyme leaves

  • 2 tablespoons ground allspice

  • 2 tablespoons soy sauce

  • 2 tablespoons brown sugar

  • 1 tablespoon kosher salt

  • 1 tablespoon black pepper

  • 6 tablespoons vegetable oil

  • 1 tablespoon apple cider vinegar

  • 4 tablespoons lime juice

  • Rice or vegetables for serving

Directions

Cut chicken thighs into bite size pieces and place in a bowl or shallow pan. Set aside. Using a food processor, combine all additional ingredients and grind until a paste forms. Spoon paste over the chicken and massage lightly so that each piece is covered. Place chicken in the refrigerator for at least 2-4 hours before cooking. Once chicken has had time to marinate, thread chicken onto skewers. Sprinkle with additional ground allspice and kosher salt and set aside. Preheat grill to medium high heat. Grill chicken until cooked through, about 5 minutes a side, or until 165°F. Remove chicken skewers from grill and serve with rice or vegetables if desired.
