Loaded Chicken Taco Fries

These loaded taco fries are a fun twist on taco night. Loaded with flavor your entire family will love this easy to make recipe. What’s great is that you can add whatever toppings you love most. Perfect as a fun weeknight meal or as an appetizer at your next get together. No matter what, this loaded taco recipe is a winner.

Ingredients

Loaded Fries:

  • 3-4 large russet potatoes

  • 1 package taco seasoning

  • 2-3 tablespoons olive oil

  • 1 lb. Smart Chicken Boneless Skinless Breasts, boiled and shredded

  • ½ cup shredded cheese

  • 1 cup shredded lettuce

  • ½ cup tomatoes, diced

  • ¼ cup jalapeno, finely diced

  • ¼ cup black olives, finely diced

  • ½ avocado, sliced thin

  • ¼ cup cilantro, remove stems

Lime Crema:

  • ¼ cup light sour cream

  • 2 tablespoons lime juice

  • 1 teaspoon lime zest

  • 2 teaspoons garlic, minced

  • ¼ teaspoon salt

Directions

Preheat the oven to 425°F. Combine light sour cream, lime juice, lime zest, minced garlic and salt in a small mixing bowl. Cover the lime crema and refrigerate.

Wash and dry your potatoes. Cut them into evenly sized fries and rinse them under cold water. Pat them dry with a paper towel. Toss them with taco seasoning and add them to a baking tray. Drizzle with olive oil making sure all sides are well coated. Bake for 25 minutes at 425, toss the fries, reduce the heat to 375 and let them finish baking for 20-25. Boil a pot of water and cook your chicken in the water for 15-20 minutes or until the chicken reaches 165 internally. Drain the water. Using two forks shred the chicken and set it aside. Once the fries are cooked, you can add the shredded chicken and shredded cheese. Place back in the oven for 2-3 minutes or until the cheese is melted. Next, add the shredded lettuce, diced tomatoes, diced jalapeno, diced black olives, avocado slices, and cilantro. Top everything with the lime crema and enjoy!
