Ingredients

Mediterranean Grilled Chicken

  • 1 – 1.5 lbs. Smart Chicken Boneless Skinless Chicken Breasts, butterflied into cutlets

  • 2 tablespoons olive oil

  • 1 tablespoon lemon juice, fresh squeezed

  • 2 teaspoons Italian seasoning

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

Simple Tomato Salad

  • 1 cup cherry tomatoes, halved

  • 1 cup English cucumber, diced

  • ½ cup kalamata olive, pitted and halved

  • ¼ – ½ cup mozzarella pearls

  • 2 tablespoons Italian parsley, chopped small

  • 1-2 tablespoons olive oil

  • 1 tablespoon lemon juice, fresh squeezed

  • Salt and black pepper, to taste

Directions

Make the Salad

Combine diced English cucumber, halved cherry tomatoes, halved kalamata olives, mozzarella pearls, chopped Italian parsley, olive oil, lemon juice, salt and black pepper. Toss until well coated. Cover and refrigerate until ready to use.

Prepare the Chicken

Butterfly your chicken breasts into thin cutlets. This will promote faster, more even grilling.

Marinate the Chicken

Combine olive oil, fresh squeezed lemon juice, Italian seasoning, salt and black pepper. Whisk well and coat the cutlets. Cover and refrigerate for 15-30 minutes.

Prepare the Grill

Preheat the grill to 400-450 degrees. Brush the grill grates with avocado oil right before you add the cutlets. Grill for 5-6 minutes per side or until the internal temperature reaches 165 degrees Fahrenheit. Cooking time will slightly vary based on the thickness of your cutlets.

Assemble the Dish

Remove the cutlets from the grill. Place them on a serving platter. Top with the simple salad and serve hot.
