Mustard Balsamic Chicken Thighs with Green Beans

Ingredients

  • 1 pound Smart Chicken thighs

  • 2 teaspoons Dijon mustard

  • 6 tablespoons olive oil, divided

  • 2 teaspoons lemon juice

  • 2 tablespoons balsamic vinegar

  • 1 clove garlic, minced

  • Kosher salt, to taste

  • Pepper, to taste

  • 1/2 pound fresh green beans, trimmed

Directions

In a medium bowl, whisk together the mustard, 4 tablespoons olive oil, lemon juice, vinegar, and garlic. Pour over chicken thighs and let marinate in the refrigerator overnight.

Season the chicken thighs all over with salt and pepper. In a large skillet, sear the thighs on both sides until golden brown, transfer to a baking dish and bake at 375°F for 15 to 20 minutes, or until chicken is cooked through (165°F in the center).

Directions (for the Green Beans)

Heat 2 tablespoons olive oil in a skillet over medium heat; cook and stir green beans, salt and pepper together until desired tenderness is reached, 5 to 10 minutes.
