Ground Chicken Tostadas

Easy and delicious, these ground chicken tostadas are the perfect appetizer or light weeknight dinner. Loaded with lean and juicy ground chicken, onions, chilies, black beans and cheese, this easy tostada recipe comes together in no time. What’s great, is that you can add whatever toppings you enjoy most too. Avocado, cilantro, salsa or sour cream would all work well.

Ingredients

  • 1 tablespoon olive oil

  • 1 cup onion, diced small, yellow or sweet onion will work

  • 2 teaspoons garlic, minced, about 1-2 cloves

  • 1 lb. Smart Chicken Ground Chicken

  • 2-3 Tablespoons taco seasoning, store bought is fine

  • 4 ounces diced green chilies, canned works fine

  • 8 tostadas, small – medium in size

  • 15-ounce refried black beans, canned works fine

  • ½ cup shredded cheddar cheese

  • ¼ cup cilantro, roughly chopped

  • ¼ cup light sour cream, or lime crema

Directions

Heat the refried black beans in a small sauce pot according to the can.

Heat a large skillet over medium high heat and add olive oil. Next, add diced onions and garlic. Sauté until soft and lightly browned. Then, add the ground chicken and taco seasoning. Make sure the chicken cooks through. Finally, add the diced green chilies. Stir well. Remove the chicken mixture from the heat.

To assemble the tostadas: Grab one tajin flavored tostada. Add 1-2 tablespoons of the hot refried black beans. Pile on the chicken mixture. Top with cheese, sour cream, and cilantro. Repeat for all tostadas.
