One Pan Pizza Chicken

This one pan pizza chicken is the perfect weeknight meal. The tender and juicy chicken is topped with marinara sauce, sliced fresh mozzarella cheese, and pepperoni. All baked to cheesy perfection in the oven, this recipe is hard to resist.

Ingredients

  • 1 lb. Smart Chicken Boneless Skinless Chicken Breasts, butterflied into 4 thin cutlets

  • ¼ teaspoon salt, season the chicken

  • ¼ teaspoon black pepper, season the chicken

  • 1-2 tablespoons olive oil, pan sear the chicken

  • 1 cup marinara, store-bought is fine

  • 4 ounces mozzarella cheese, fresh, sliced

  • 8-10 pieces pepperoni, sliced thin

Optional toppings

  • red pepper flakes

  • Italian parsley

  • parmesan cheese

Directions

How to make one pan pizza chicken: Preheat the oven to 400 degrees. Butterfly your chicken breasts and season both sides with salt and black pepper.

Heat a 10-inch cast iron pan over medium high heat. Add olive oil. Once the oil is hot, add the seasoned chicken. Sear for 4-5 minutes per side. Cooking time will vary based on thickness.

Add the marinara, sliced mozzarella and pepperoni. Place the dish in the oven for 15-20 minutes to finish cooking. You’ll want the cheese to be hot and bubbly and the pepperoni to be crispy on the edges. Option to broil for 1-2 minutes.

Top with red pepper flakes, grated parmesan cheese and chopped Italian parsley. Serve hot and enjoy.
