One Pan Sun-dried Tomato Basil Chicken and Feta

This simple low carb dish combines Smart Chicken boneless skinless chicken breasts, sun-dried tomatoes, white wine, heavy cream and feta cheese prepared and baked all in the same pan. Serve with a side of cauliflower rice or salad and dinner is done.

Ingredients

  • 1 pound Smart Chicken Boneless Skinless Chicken Breasts

  • ½ cup chicken bone broth

  • ½ teaspoon paprika

  • ½ teaspoon dried oregano

  • ½ teaspoon Kosher salt

  • ½ tseapoon black pepper

  • 1 tablespoon olive oil (recommend to use olive oil in sun-dried tomato jar for additional flavor)

  • 1 cup white onion, small dice

  • 2 teaspoons fresh garlic, finely minced

  • 2 oz white wine or cooking wine

  • 1/3 cup heavy cream

  • ¼ cup sun-dried tomatoes, chopped

  • 4-6 oz. feta cheese crumbles

  • ¼ cup fresh basil, chiffonade

Directions

Preheat oven to 375°F. Sprinkle paprika, oregano, Kosher salt and black pepper on chicken breasts making sure to cover both sides. Using a cast iron pan, warm olive oil over medium heat. Add onion and garlic and cook until onions are translucent. Push the onions to the perimeter of the pan, add chicken breast and sear on both sides for 2-3 minutes. Deglaze pan with white wine and Smart Chicken bone broth and whisk in heavy cream. Top chicken with sun dried tomatoes and feta cheese throughout the pan. Place pan in the oven for 15 minutes until feta is melted and chicken reaches an internal temperature of 165°F. Remove from oven and serve with cauliflower rice or with fresh greens.
