Pressure Cooker Soy And Garlic-Braised Chicken

Warm flavors and spices meld together for a satisfying meal that tastes even better than it smells.

Ingredients

  • 4 Smart Chicken thighs

  • Kosher salt and freshly cracked black pepper, as needed

  • 2 tablespoons sesame oil

  • ½ red onion, sliced

  • 10 cloves garlic, sliced

  • ¼ cup dark soy sauce

  • ¼ cup oyster sauce

  • 2 whole dried chili peppers

  • 3 whole star anise

  • 1 cinnamon stick

  • 1 tablespoon minced ginger

  • 1 tablespoon brown sugar

  • ¼ cup rice wine vinegar

  • 2 large sweet potatoes, cut into ½-inch slices

  • 2 cups cooked rice, for serving

  • Green onions, sliced for serving

Directions

Season the chicken thighs with salt and pepper. Turn the pressure cooker to sauté mode and heat the sesame oil. Sauté the chicken until golden brown on both sides, about 15 minutes. Add the red onion and garlic and sauté for 5 more minutes. Add the soy sauce, oyster sauce, dried chili peppers, anise, cinnamon stick, ginger, brown sugar, vinegar, and sweet potatoes. Pressure cook on high for 20 minutes. Serve over rice and garnish with green onions.
