Roasted Chicken and Mushroom-Rice Stuffing

Ingredients (for the Roasted Chicken)

  • 1 Whole Smart Chicken, about 3 to 4 pounds

  • 2 tablespoons butter, softened

  • Kosher salt and pepper

  • ½ tsp fresh rosemary

  • ½ tsp fresh thyme

  • 1 cup Smart Chicken Classic Bone Broth

Directions

Preheat the oven to 400°F. Rinse the chicken and pat dry. Rub the chicken all over with the butter and sprinkle chicken with salt, pepper, and herbs. Place the chicken in a roasting pan and pour Smart Chicken Classic bone broth in the pan. Roast the chicken for about 20 minutes at 400°F. Reduce the heat to 350°F, and roast the chicken for about another 40-55 minutes or until the internal temperature of the chicken reaches 165 in both the thigh and breast.

  • 4 cups roasted chicken, cut or shredded into bite size pieces

  • 3 TB butter or vegetable oil, divided

  • 1 shallot, chopped

  • 8 oz. mushrooms, sliced

  • ½ tsp kosher salt

  • 2 TB flour

  • 1- 16.9 oz Box or 2 cups Smart Chicken Mushroom Chicken Bone Broth

  • 2 cups cooked brown rice

  • ½ cup peas

  • ½ cup sour cream

  • ¼ cup fresh parsley, chopped

  • 1/3 cup bread crumbs

Directions

Preheat oven to 350 degrees and grease a 9 x 9 baking dish. Heat 1 TB butter or oil over medium heat in a saute pan. Add chopped shallots and mushrooms and cook until mushrooms start to release water. Add 2 additional TB of butter or oil, salt and 2 TB flour and cook for 1-2 minutes, make sure to keep stirring. Slowly add about 2 TB of Smart Chicken bone broth and then add the remaining broth and bring to a boil. Lower heat, add chicken, brown rice, peas, sour cream and parsley. Place mixture in 9 x 9 baking dish and top with breadcrumbs. Bake for 20-25 minutes.
