Ingredients

  • 4 Smart Chicken Boneless Skinless Chicken Thighs

  • ¼ cup AP flour

  • 1 teaspoon salt

  • ½ teaspoon cracked black pepper

  • 2 tablespoons olive oil

  • 1 sweet onion, roughly chopped, about 1 cup

  • 4-5 cloves garlic, left whole

  • 1 tablespoon herbs de Provence

  • ¼ cup white wine

  • 2 tablespoons lemon juice, fresh squeezed

  • 2 teaspoons capers, with juice

  • 14.5 ounces crushed tomatoes, drained

  • ⅓ cup green olives, pitted

Directions

Preheat the oven to 400°F. Combine AP flour, salt and black pepper in a bowl. Dredge the chicken thighs through the flour mixture, shaking off any excess. Heat olive oil in a Dutch oven pot over medium high heat. Once the oil is hot, but not smoking add the seasoned chicken thighs.

Once the chicken has browned on one side, flip it over and add the onions, garlic, and herbs de Provence. Sauté for 3-4 minutes. Deglaze the pan with white wine. Add the lemon juice. Next, add the drained crushed tomatoes, capers, and pitted olives. Cover and place in the oven to finish cooking for 20-25 minutes. Remove the lid and serve hot.
