Nothing says comfort food and family friendly like macaroni and cheese! This version features a homemade cheese sauce and sautéed Smart Chicken Frankfurters.
Ingredients
1 pound Cellentani pasta
1 package Smart Chicken Frankfurters, cut into coins
2 Tablespoons unsalted butter
2 Tablespoons flour
1¼ cups milk
1 cup sharp cheddar cheese, shredded
½ teaspoon kosher salt
Pinch white pepper
Directions
Cook pasta as directed. While pasta is cooking, slice Smart Chicken Frankfurters into coins. In a skillet, warm coined Frankfurters over medium heat. To make the sauce, start by making a roux with butter and flour. Warm butter over medium heat and add flour. Stir constantly for 2-3 minutes and do not let flour brown. Add milk and bring to a boil. Lower heat to a simmer and add shredded cheddar, salt and pepper. Adjust seasonings as necessary and combine sauce with cooked pasta. Sprinkle sautéed Frankfurters over the top and serve.
