Smoked Chicken with Simple Bourbon BBQ Sauce

This recipe features a whole chicken, seasoned with a barbeque rub and served with homemade bourbon barbeque sauce.

Ingredients

  • 1 Whole Smart Chicken

  • 1-2 Tablespoons canola or vegetable oil

Rub:

  • 2 Tablespoon brown sugar

  • 1 Tablespoon white sugar

  • 1 teaspoon salt

  • 1 Tablespoon paprika

  • 1 Tablespoon chili powder

  • 1 teaspoon pepper

  • ½ teaspoon garlic 

Simple Bourbon Barbecue Sauce:

  • 2 Tablespoon bourbon

  • 1 cup ketchup

  • ½ cup brown sugar

  • ¼ cup apple cider vinegar

  • ¼ cup apple jelly

  • 1 Tablespoon Worcestershire sauce

  • 1 teaspoon kosher salt

  • 1 teaspoon ground pepper

  • 2 teaspoon rub

  • ½ teaspoon garlic

Directions

For the rub: combine all ingredients and reserve 2 teaspoons of the rub for the barbeque sauce.

For the chicken: Preheat smoker or pellet grill to 275°F. Remove the whole chicken from packaging and remove butcher’s twine. Carefully pat down chicken with paper towels so that it is dry and easy to handle. Place chicken on a flat cutting board, breast side down. Using a sharp Chef’s knife, remove the backbone of the bird. Flip bird over and press down so that the bird lays flat.  Soak up any excess juices after cutting with additional paper towels. Apply canola oil to the skin and then lightly coat the bird (both sides) with the rub. Place chicken on the grill and cook until chicken reaches an internal temperature of 165°F. Allow chicken to cool slightly and carve as desired. When Chicken has almost finished cooking, prepare the barbeque sauce.

For the barbecue sauce: Combine all ingredients and bring to a boil. Lower heat and bring to a low simmer until ready to serve. Coat chicken with barbeque sauce or serve on the side.
