Spinach Artichoke Chicken Pasta

This one pot dinner utilizes Smart Chicken boneless skinless chicken breasts, Smart Chicken Garlic Rosemary Bone Broth, pasta, spinach, and artichoke hearts. Giving a dinner upgrade to the classic and popular, spinach artichoke dip.

(Serves 4-6)

Ingredients

  • 2 Smart Chicken Boneless Skinless Breasts 

  • 1 cup flour

  • 1 teaspoon salt

  • 1 teaspoon pepper

  • 8 oz penne pasta 

  • 16 oz. chicken bone broth

  • 1 cup milk

  • 1 cup artichoke heart, chopped

  • 5 garlic cloves, minced

  • 4 oz cream cheese

  • 1 cup Parmesan cheese

  • 2 tablespoon vegetable oil

  • 4 oz spinach leaves

Directions

Combine flour, salt, and pepper in large Ziploc bag. Dice chicken into small bite size pieces and place into bag with flour. Shake to covered chicken evenly. Remove chicken from flour and shake off excess. On medium-high heat, in large sauté pan, add oil. Add chicken, allow to brown before turning, about 5 minutes, repeat for other side. Add artichokes and garlic. Sauté about 3 minutes. Add bone broth and pasta, bring to a boil, then reduce heat to a simmer for 10-12 minutes, or until pasta is al dente. Stir in cream cheese, parmesan, and spinach leaves, until cheese is melted. Serve and enjoy!
