Strawberry-Basil Chicken

Serves 4

Try this light, summery dish when you're short on time or just in the mood for something simple and different.

Ingredients

  • 4 boneless skinless Smart Chicken breasts

  • 2 tablespoons olive oil, divided

  • 3 cloves garlic, crushed

  • ½ teaspoon sea salt

  • ½ teaspoon pepper

  • 2 cups chopped fresh strawberries

  • 1 cup chopped fresh basil¼ cup balsamic vinegar or balsamic reduction*

  • *To make balsamic reduction: In a small sauce pot, heat ½ cup balsamic vinegar to a boil. Reduce heat to simmer and cook until liquid has reduced by half and is thick enough to coat the back of a spoon.

Directions

Arrange chicken breasts to lay flat between two pieces of parchment paper. With a meat mallet, pound the chicken until approximately 1-inch thick. Season on each side with salt and pepper.

To a large skillet to medium heat, add 1 tablespoon of olive oil. Add garlic and cook for 2 minutes or until fragrant. Transfer chicken to pan and cook for about 4 minutes per side (until golden brown and cooked through). Set aside.

Toss together strawberries, basil, balsamic, and remaining tablespoon of olive oil. Top each chicken breast with strawberry mixture; add salt and pepper to taste. Add additional oil or glaze if desired. Serve immediately.
