Ingredients
1 pound Smart Chicken tenders
2 cloves garlic, minced
3 tablespoons brown sugar
2 tablespoons olive oil, divided
1 tablespoon fresh rosemary, minced
Kosher salt and pepper, to taste
One large head cauliflower
Directions (for the Chicken)
In a small pan, sauté garlic in oil until softened. Remove from heat and stir in brown sugar and rosemary. Season chicken tenders liberally with salt and pepper and arrange in a greased baking dish. Crumble the brown sugar mixture over top and bake at 375°F until the chicken is cooked through (about 15 to 20 minutes), basting once or twice.
Directions (for the Cauliflower Rice)
Wash and thoroughly dry cauliflower, then remove all greens. Cut into small pieces and use a food processor grater attachment to grate the cauliflower into “rice.” Transfer to a paper towel and press to remove any excess moisture. Cook (or enjoy raw)! Simply sauté in a large skillet over medium heat in 1 tablespoon olive oil. Cover with a lid so the cauliflower steams and becomes more tender. Cook for a total of 5-8 minutes, then season as desired (such as with soy sauce or salt and pepper).
