Tzatziki Style Chicken Salad

Light, healthy and easy to make, this tzatziki style chicken salad is a winner. Made from simple ingredients this recipe comes together in under 30 minutes.

Ingredients

  • 1 lb. chicken tenderloins, boiled and cubed, Smart Chicken

  • 1 cup English cucumber, cored and diced

  • 1 cup chickpeas, rinsed and drained

  • ½ cup red onion, diced small

  • 2 tablespoons dill, freshly chopped

  • ¼ cup crumbled feta

  • salt, to taste

  • cracked black pepper, to taste

Tzatziki Style Dressing

  • ½ cup 0% Greek yogurt

  • 2 tablespoons olive oil

  • 1 tablespoon lemon juice, fresh squeezed

  • 1 tablespoon dill pickle juice, mild flavor

  • 1 tablespoon warm water

  • 1 teaspoon garlic, minced

  • ¼ teaspoon salt

Directions

Make the Dressing

In a small mixing bowl, combine 0% Greek yogurt, olive oil, fresh squeezed lemon juice, mild dill pickle juice, minced garlic, salt, and warm water. Mix until well combined. Set aside.

Prepare the Chicken

Boil a pot of water and cook the chicken tenderloins for 15 minutes or until the internal temperature reaches 165 degrees Fahrenheit.

Drain the water and let the chicken cool.

Once cool to the touch, cube the chicken into bite-sized pieces.

Assemble the Dish

Combine the diced chicken, cored and diced cucumber, rinsed and drained chickpeas, finely diced red onion, chopped dill, salt and black pepper. Mix until well combined.

Add the dressing and toss until everything is well coated.

Top with crumbled feta and enjoy.
