Grilled Chicken With Basil Pesto

Serves 2 to 3 (as a main course)

Ingredients

  • 2 Smart Chicken boneless skinless breasts

  • Kosher salt and freshly cracked black pepper

  • 1 tablespoon canola oil

  • 1 cup tightly packed fresh basil

  • ½ cup fresh Italian parsley

  • ¼ cup arugula

  • ½ cup extra-virgin olive oil

  • 1 tablespoon kosher salt

  • ½ lemon, juiced

Directions

Preheat the grill to medium heat, about 350°F. Season chicken with salt and pepper and drizzle with the canola oil. Add the remaining ingredients to a food processor and blend until smooth. Grill the chicken to 165°F and while fresh off the grill, toss the chicken in the pesto. Serve with additional pesto on top.
